Topic Bullet IconEating Disorders

Jacqueline has worked in the area of eating disorders throughout her career. She has worked on medical teams with social workers, psychotherapists, and psychiatrists. This collaboration with mental health workers has allowed her an understanding of the unique nutritional and psychological needs of patients with anorexia, bulimia, compulsive overeating, or distorted eating behavior.

For the patient undergoing therapy, nutritional counseling provides a structure for the development of long-term healthy eating habits. The therapist prior to the nutrition consultation briefs Jacqueline. A careful diet history is taken to determine the patient's daily schedule, personal food preferences, and exercise program. A computerized analysis of the patient's diet can be done to determine the quality of the diet and the nutrient deficiencies present.

Together with the therapist and dietitian, the patient formulates their initial diet, transitional diet, and maintenance diet. A number of topics are covered during the sessions that relate to the patient. These include: physiological functions of food, energy and satiety values of carbohydrates, proteins, and fats, dietary modifications for bowel discomfort, fluid balance, consequences of omitting essential nutrients, and vegetarian diets.

There is a de-emphasis on weight and caloric content of foods during sessions. Strategies are covered to deal with holidays, vacations, and social gatherings. Snacking techniques are reviewed to allow healthy behaviors to develop with supplemental food.
